Salad Dressing 101


Everyone knows that the secret to a delicious salad is in the salad dressing. Personally, I love salad, though I find that most people avoid eating salads because of it's healthy rep (healthy foods=good for you=tastless:-(). We seem to associate it with diets and weight loss, and believe that salads are only meant to be eaten by people who make a living out of being thin. Though it is true that "leafy greens" should be incorporated into our daily diet, we must also realize that salads don't have to be boring and tastless. Here are a few of my favourite salad dressings that I use to make my healthier eating habits more appealing to the tastebuds:-)


Balsamic Vinaigrette

Ingredients -

1/2 cup Balsamic Vinegar
3 tablespoons Dijon Mustard
3 tablespoons Honey
2 Garlic cloves, finely minced
2 small Shallots, finely minced
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
1 cup Extra Virgin Olive Oil

Preparation:

1.In a serving bowl, whisk balsamic vinegar, Dijon mustard, honey, garlic, shallots, coarse salt, and fresh ground black pepper until well blended.
2.Gradually whisk in olive oil.


Lime Cilantro Dressing

Ingredients -

1/2 cup Olive Oil
1/3 cup Lime Juice or Wine Vinegar
3 tablespoons chopped Fresh Cilantro
1 1/2 teaspoons Ground Cumin
1 teaspoon Salt
1/8 teaspoon Pepper
3 cloves Garlic, finely chopped

Preparation:

Shake all ingredients in tightly covered container. Shake before serving.


Caesar Dressing Recipe

Ingredients -

1 Whole Egg plus 1 yolk
1 tablespoon minced Anchovy
2 teaspoons minced Capers
1 tablespoon Garlic
1 tablespoon Mustard
Juice of 3/4 large Lemon
Pinch of Salt and Pepper
2 cups Olive Oil
5 tablespoons grated Parmesan (should be fresh)

Preparation:

Place whole egg and egg yolk in bowl of food processor and pulse to combine. Add anchovy and capers to the egg and blend until pale/light yellow and frothy. Add garlic and mustard; blend again. Add lemon juice and salt and pepper; blend again. With food processor running, pour in 1-12 cups of oil in a slow drizzle/stream. Add Parmesan, continue blending, and add the rest of the oil in a slow drizzle. Check consistency. If the dressing is too thick (like mayonnaise), add water, 1 tablespoon at a time, blending with each addition, until you reach the desired consistency.


Cole Slaw Dressing

Ingredients -

1/2 cup Mayonnaise
2 tablespoons Vinegar or Lemon Juice
1 tablespoon grated Onion
1/2 teaspoon Celery Seed
1 teaspoon Sugar
1/2 teaspoon Salt
1/8 teaspoon Pepper

Preparation:

Combine and mix into 4 cups shredded cabbage and a grated carrot.


French Dressing Recipe

Ingredients -

3/4 cup Olive Oil
1/4 cup lemon Juice
1 tablespoon Sugar
3/4 teaspoon Salt
1/4 teaspoon Paprika
1/4 teaspoon Dry Mustard
1/4 teaspoon Pepper
1 clove Garlic, halved

Preparation:

Put all ingredients in a jar with a screw-top lid. Cover jar and shake vigorously to blend well.
Chill dressing for 8 hours or overnight and remove garlic before serving. Shake well before using.


Fruit Salad Dressing

Ingredients -

1/4 cup Coconut Oil
2 tablespoons Fresh Lemon Juice
1 tablespoon Honey
1/4 teaspoon Tamari Soy Sauce

Preparation:

Place all ingredients in a jar, cover tightly, and shake until well blended.


Honey Dijon Dressing

Ingredients -

1/2 cup Olive Oil
1/3 cup Honey
1/4 cup Lemon Juice
1 tablespoon Dijon Mustard

Preparation:

Shake all ingredients in tightly covered container. Shake before serving.


Honey Mustard Dressing Recipe

Ingredients -

1/4 cup Mayonnaise
1 tablespoon Prepared Mustard
1 tablespoon Honey
1/2 tablespoon Lemon Juice

Preparation:

In a small bowl, whisk together the mayonnaise, mustard, honey, and lemon juice. Store covered in the refrigerator.


Honey Pecan Salad Dressing

Ingredients -

1/3 cup Olive Oil
3 tablespoons Honey
1 tablespoon Lemon Juice
2 teaspoons Vinegar
1 teaspoon Soy Sauce
1/2 cup Pecan Pieces
2 tablespoons warm Water
1 grated Rind Lemon
2 Garlic Cloves, smashed

Preparation:

In a blender, mix all ingredients till smooth
Chill thoroughly.

This dressing can be kept refrigerated up to 2 weeks.


Italian Dressing

Ingredients -

1 cup Olive Oil
1/4 cup White Vinegar
2 tablespoons finely chopped Onion
1 teaspoon Sugar
1 teaspoon Ground Mustard (dry)
1 tablespoon chopped Fresh or 1 teaspoon Dried Basil Leaves
1/2 teaspoon Salt
1/2 teaspoon Dried Oregano Leaves
1/4 teaspoon Pepper
2 cloves Garlic, crushed

Preparation:

Shake all ingredients in tightly covered container. Shake before serving.


Tomato Dressing

Ingredients -

2/3 cup Red Wine Vinegar
2/3 cup Water
¼ cup Tomato Paste
2 tablespoons Olive Oil
2 tablespoons chopped Parsley
2 teaspoons Sugar
1 teaspoon Paprika
1 teaspoon Dried Basil Leaves, crushed
½ teaspoon Dried Thyme Leaves, crushed
½ teaspoon Lemon Juice
¼ teaspoon Pepper
¼ teaspoon Garlic Powder
1/8 teaspoon Salt

Preparation:

Place vinegar, water, tomato paste, oil, green onion, parsley, sugar, paprika, basil, thyme, lemon juice, pepper, garlic powder and salt in a blender container.
Cover and blend at medium speed for 1 minute, or until smooth. Pour into a jar with a tight- fitting lid. Cover and let stand for 30 minutes to develop the flavor.

Shake before using.


Smoked Paprika Vinaigrette


Ingredients

1/2 cup red wine vinegar
1/3 cup honey
1 tablespoon stone-ground mustard
1 tablespoon lime juice
3/4 teaspoon ground black pepper
3/4 teaspoon salt
1 1/4 teaspoons smoked paprika
1 clove garlic
2 tablespoons chopped onion
1/4 teaspoon oregano
1 pinch white sugar (optional)
1/2 cup olive oil

Directions

Blend the red wine vinegar, honey, mustard, lime juice, pepper, salt, paprika, garlic, onion, oregano, and sugar together in a blender until thoroughly mixed. Drizzle the olive oil into the mixture while blending on low. Chill at least 1 hour before serving.
